5 Quick, Easy, cheap, meals that are Quality.

Here are five quick easy meals that you can throw together if you are in a rush or you have no energy.


1. Mushrooms, samphire and egg fried ice

(you can always change the egg for tofu as can be seen in the picture. This makes a really nice vegan option.)

Ingredients

  • 3 small eggs /2 large Eggs

  • 4 handfuls of diced mushrooms

  • Handful of samphire

  • Sprinkle of pine nuts

  • A cup of rice

Directions

1. Pour into a pan and add two cups of water bring to a boil for about 15 mins. Once cooked take off the hob and put it to cool on the side.

2. Scramble your vegetables in with the egg. Once done take off the hob and put to the side for later.

3. Fry the rice and stir in the egg and vegetables.

3. Once done mix in the rice put it in a bowl and you are good to go.


2. Whole grain salad

The beauty of this dish is you can switch it up. Especially when considering the veg and fruit. Resulting in it being an effortless seasonal dish.

Ingredients

  • Choose any grain of your choice. Mine is couscous half a cup of couscous to a cup of water that has been cooked and cooled.

  • 1 diced courgette that has been (i use this term loosely) fried in water.

  • ¼ of a diced pepper

  • Green leaves of your choice

  • Sprinkle of pine nuts/ a hand full of beans

  • Samphire


Method

Dice, Toss and display for the desired look. And enjoy.


If you don’t want this to be a vegan dish go ahead and add cheese (for a Vegetarian dish), or muscles (for a Pescatarian dish) or chicken (for a meat-eater).


3. Nutty fried courgettes and rice


Ingredients

  • A cup of de-shelled Muscles

  • Two handfuls of mushrooms

  • A handful of samphire

  • A sprinkle of pine nuts

  • 1 diced courgette

  • Miso soup

  • Soya sauce

  • Rice


Method

1. use 1 cup of rice to 2 cups of water boil and put to the side to cool.

2. In the second pan slide in a teaspoon of coconut oil (any oil) I just had coconut oil handy.

3. Throw in the mushroom’s courgettes, muscles and sprinkle on the pine nuts.

4. Once the courgettes have melted into the pan add the rest of the ingredients.

5. Stir for 5 min on high heat.

6.Take off the stove.

7.Put rice in a bowl and add the nutty courgettes on top.


Voila, a mouth-watering and tasty dish.


4.Miso Soup and Rice Crackers


Simple, delicious and inexpensive. Great for lazy days. It is as easy as just adding hot water.


5.Pasta

Ingredients

  • Pasta

  • Soya cream

  • Diced Mushrooms

  • sprinkle of salt

  • salmon trimmings




Method

1. Boil the Pasta and let it cool

2. In the second saucepan throw in the other ingredients and bring them to a simmer.

3. Add the cooked pasta and mix it well.
