Fresh Summer Salad.

This is my jazzy take on a refreshing summer salad. It is rich in vitamins and mineral and spices up my salad routine. It is also great if you are not a big veggie eater. It is enjoyable to make and does not take very long.

I was fascinated that I could eat turnip tops. Using it for a salad base was a creative and tasty way to create change to my salad. I always try and use two different leaves minimum to make sure that my salad is full of flavour. So I used organic oak leaf lettuce, which is really juicy.

I then sprinkled a punnet of red currants and a punnet of black currants. When eating, we realised that the sweetness of the black currants mellowed the sharp tinge of the red currants. They really complemented each other really well. The red currants and the black currants were straight from the garden. So I normally prepare and freeze a batch and keep a fresh batch for baking, snacks or smoothies. As you can see, I used a batch that I had frozen, but they had 'melted' by the time we ate it.

The Strawberry's are straight from the shop. I used half a punnet, chopped them in half and tossed them in. There is no need for it to be perfect because it adds to the fun.

Total Time: 8 mins


Ingredients:

  • 3 Turnip tops

  • 1 Lettuce

  • 1/2 a punnet of mixed berries

  • A punnet of red currants

  • A punnet of black currants

  • A punnet of strawberries


Directions

  1. Slice the turnip tops and lettuce and place them into a salad bowl.

  2. Pour in the berries and currants

  3. Toss, and it is ready to serve.
