Having a lactose intolerance literally means I am unable to digest the lactose in milk fully. I also have IBS. To which I was in denial about it for a long time.
After being quite poorly, I decided that the doctors knew what they were talking about and stopped eating dairy (apart from when I have a moment of weakness).
The freedom I found in food and my love for food has grown. I rekindled my passion for affordable whole foods, organic food, locally sourced fruit and veg and fair-trade products. I can not forget to mention my love for seafood. I also rekindled my love for ecological household goods and sanitary products.
I am a lot happier because I feel great after I eat. I love smelling great and feeling clean without selfishly damaging the environment around me. I feel a warm bubble inside when bees mistake me for flowers.
I am happy.
I feel good that I am putting good things with the correct nutrients into my body. I love the fact that I feel healthy. I am blessed that I can enjoy this food and this kind of lifestyle.
